Not Your Mother's Pizza




Just about everyone I've described it to who hasn't been to Joe Momma's to try it themselves has cringed when I listed the ingredients: Lots of beef, tons of cheese, bacon, pickles, onions and mustard. We're talking a bacon cheeseburger taking on the pizza form. The geniuses at Joe Momma's has performed a perfect crossover. I'm wearing at least three 16-inch bacon cheeseburger pizzas on my thighs right now, and I don't even mind that much. In fact, I'm kinda proud.



The T-Town area boasts several great indie pizza places (Brother's Pizza, The Hideaway, Pie Hole, Umberto's and Savastano's come to mind), but only one is smack dab in the middle of the new restaurant row forming in the Blue Dome District, and only one hosts not only a trivia night every Thursday, but also a karaoke night every Tuesday. On a huge, elevated stage. It'll make you feel like a star, man, a star.



In fact, there's something hip and fun and exciting happening at Joe Momma's every single night of the week. Here's how to snag it: Impress me with your personal pizza creation. Tell me toppings, tell me sauce, tell me crust, tell me all. Wow me with your palate, yes, but also grab my attention with your creativity and zany mind. Come up with a pizza that doesn't force me to suppress my yawn reflex, and I'll hand over the Mamma's bucks.

I get a ball of dough from the Pie Hole for just a couple bucks and grab a roasted chicken from Reasors. Next I create the most yummy pizza ever.

1. Cook a few pieces of bacon in a skillet, until crispy, then crumble. Set aside.
2. Caramelize some red onions in the left over bacon fat. Set aside.
3. Debone the yummy roasted chicken and mix with your favorite bottled BBQ sauce.
4. Make your pizza crust ready for toppings, whether it's a dough ball from Pie Hole or a premade crust.
5. Use some of the bottled BBQ sauce for the base on top of the crust - add chicken, red onions and crumbled bacon. Top with gorgonzola and a bit of cheddar.

Bake.

Best, easiest, most delish pizza ever!

In honor of the Naifeh clan, who play violin across the street @ McNellies... I'll call my creation:

Lebanese Mafia Flatbread

Ground lamb, spinach, pine nuts, garlic and onions seasoned with all those exotic middle-eastern spices, drizzle some tahini dressing over it and a generous helping of feta cheese.

This'll make your tastebuds declare a jihad and start a good old fashioned tent revival at the same time. ;)

I LOVE ME SOME JOE MOMMA'S. The best pizza in town, hands down.

I didn't know about the karaoke. I totally want to try that. I used to sing (drunk) all the time.

Ok, here's the pizza of my dreams.

Alfredo sauce, mozzarella cheese, black olives, bacon, spinach, caramelized onions. Doesn't that sound divine?

Now I want to try the cheeseburger pizza. Thom likes the chicken, bacon, ranch and the bbq pizza. I'm sure they don't make a bad one there.

I also love Joe Momma's but I sure don't like the bacon cheeseburger pizza. It's just wrong!!

I've never had a curry inspired pizza... but that might be pretty good. Chicken, a curry sauce, cheese, onions.... emmmm!

Mine would have the sun dried tomato chicken sausage from Natural farms that I can't get enough of, portabello mushroom slices, norcina sauce (a marinara mixed with cream), and tons of mozzerella cheese sprinkled with a layer of parmesan to soak up the juicy goodness!

I just thought of another pizza I would love to eat:

Ratatouille pizza with a garlic polenta crust!
Grilled eggplant, zucchini, green and red bell peppers with mozzerella cheese on a flat baked round of polenta.

I made this one once and loved it, too:

Chicken FAJITA PIZZA-

Spiced chicken fajita meat, grilled green, red, and yellow bell pepper, and caramelized onions with sharp cheddar and monterey jack cheese on tomato enchilada sauce (with just a dash of cinnamon and oregano so it's sonoran style) atop a thin crust pizza. Oh, and a few pickled jalapenos and fresh tomatoes sprinkled on after it's baked.

I have made this pizza several times and think its the most tasty thing in the world.

Spicy Italian sausage, pepperoni, roasted mushrooms, Red, Yellow, and Green Bell Peppers, Mixture of Garlic Pizza Sauce and Alfredo Sauce, and Tons of Mozzarella, Provolone, Parmesan, and Gorgonzola cheeses.

If you are trying for a more healthy kick then use wheat crust instead of white and don't add the Alfredo. Doing these two things will greatly reduce the amount of fat content in your pizza.

How about chicken tikka masala pizza? Garlic naan crust (Indian flatbread), slightly spicy tomato cream sauce, topped with shredded tandoori chicken, fried basil leaves and paneer (Indian cheese). I may have to whip one of those up myself!

My standard is to use a premade flat crust. I top it with olive oil, then a basic red sauce (sometimes homemade sometimes Boboli), then fresh basil, dried oregeno, dried basil,and a little garlic salt. We add artichoke hearts, black olives, garlic, spinach, and the final touch is feta cheese on top.

Here is my favorite:

Some tasty red pizza sauce
Rotisserie chicken, freshly pulled from the spit and pulled apart.
Big thick cuts of smoked bacon, cut into respectable sizes.
Topped with an even blend of mozzarella and provolone cheeses.

Optionally, you can put some big slices of fresh off the vine tomatoes, not the chunks mind you, but the big red juicy pieces you usually put on hamburgers.

Red Eye breakfast pizza

Ten slices of cooked bacon crumbled.
Medium thin sliced tomato.
One and half cups Grated Cheddar.
Half teaspoon black pepper.
Two eggs whipped.

Arrange tomato slices on dough leaving three inch circle in middle. Sprinkle cheese and crumbled bacon.

Bake for three minutes, remove from oven. Add eggs and sprinkle pepper on whole pizza.

Return to oven for ten minutes.

Lobster Roll Pizza

Yield: two 12-inch pizzas

* Flour (for dusting)
* Basic Pizza Dough
* 1/2 cup (1 stick) butter, clarified, divided
* 2 cloves garlic, minced
* 3 ribs celery, diced
* 1 small yellow onion, diced
* 3 cups lobster meat, chopped into bite-size pieces (two 1-1/2-pound lobsters, steamed and picked clean)
* 1/2 cup Pecorino Romano cheese
* 3 tablespoons chopped fresh parsley

On a lightly floured surface, cut dough in half and roll out into two 1/2-inch-thick rounds. Brush one round generously with clarified butter.

Sprinkle garlic, celery, and onion evenly across dough. Arrange lobster pieces on top. Sprinkle with cheese and parsley. Drizzle half of remaining butter on top.

Repeat with second dough round. Bake 10 to 15 minutes.

Sushi Pizza

SERVES 4

Pizza crust Ingredients:

* 1 cup sushi rice
* 1/4 cup seasoned rice vinegar
* 2 tablespoons sesame seeds, toasted

Toppings:

* 1/2 avocado, thinly sliced
* 1/2 sheet roasted nori (pressed seaweed)
* 3/4 cup flaked imitation crabmeat or thinly sliced smoked salmon
* 1/2 cup very thinly sliced English cucumber
* 2 tablespoons pickled ginger

Pizza Dressing

Soy sauce and wasabi mixed together

Crust:
Pizza dough mixed with crushed corn chips
Green or red enchilada sauce (or use half and half)

Toppings:
Refried or Black beans

Shredded chicken or beef, preferably marinated with Mexican spice rub before cooking

Onions

Black olives

Green chiles

Spinach leaves

Mexican cheese blend

Jalepeno if desired

Kung Pao Pizza

CRUST
Pizza crust made from Jasmine rice mixed with pizza dough
KUNG PAO SAUCE
1/2 cup chicken stock
2 tablespoons cornstarch
3/4 cup soy sauce
3 tablespoons red chili paste with garlic
1/4 cup sugar
2 tablespoons vinegar
2 tablespoons toasted sesame oil

TOPPING

1 lb chicken breast, cut in 3/4 " cubes
10-15 whole chinese dried red chili peppers (don't eat these, they are for color and heat)
1 cup peanuts (optional)
1 small can water chestnuts
1/4 cup minced garlic
3 cups coarsely-chopped green onions, greens and whites

Spaghetti Pizza

Crust:
8 ounces pkg. spaghetti
1 cup grated fresh Parmesan or Romano cheese
2 eggs, beaten
Cook spaghetti till al dente.
Add eggs and cheese to bind together and make into crust.


Toppings:
spaghetti sauce to taste (or use garic or basil pesto)
1 pound ground beef
onions
garlic
shredded mozzarella cheese
